Sauteed Veggie Wraps

I saw this recipe blog hop on Natalie's blog and thought it would be fun to join!  If you have a recipe to share, head over to her blog and link up!
I talked about a new recipe book I got that I love in my Thankful Thursday post.
It's called "Cook This... Not That" and TL and I have found some great recipes in it.
I have only tried three - veggie wraps, a caprese, and guac - but I memorized the wraps and the caprese!
Here's how you make the wraps:

You need:
Asparagus
Bell Pepper
Mushrooms
Balsamic Vinegar
Kraft Olive Oil Mayo (any mayo would work - this is just the healthy kind)
Tortillas
A clove of garlic
Arugula
Feta Cheese

To Make:
Sautee the veggies in a pan with a touch of olive oil until desired color (I like mine really cooked)

In a bowl, mix 2 tablespoons of the olive oil mayo with a tablespoon of the balsamic vinegar.  Mince the clove of garlic (use about half of the clove - or it's too garlicky) and add it to the mayo/vinegar mix.  It will make a brownish color spread!

Add a healthy dab of the spread to a tortilla & then put the veggies over it with the Arugula.  Then sprinkle a little Feta Cheese on top.  Roll the tortilla to make a wrap - and voila!  You've made them!
I know, the paper towel it is on makes it look very appetizing ;)

(Added bonus... one of the wraps has less than 200 calories!  & it's very filling!)

Pair with a glass of pinot and you've got a meal!

YUMMMM!! I don't think hubs would like it, seeing he doesn't like veggies, but I can alway add some chicken or steak for him. Delish!

saving this recipe--looks delish (minus the mayo, I won't go anywhere near anything resembling mayo . . . but I bet dijon mustard would be a good substitute!)! And I'm a vegetarian so it's perfect :)

I loove wraps and that one looks really good! Annnnd Pinot is my very favorite (I have yet to find anything that I like better). Thank you for commentiong on my rant today! I know I feel better! haha That guy at my work isn't my boss that. He is just our IT guy that works on the computers! YES! I know!
And then the horrid lady that hates me for breathing is the one who happens to be my boss...

My brother is my littttle brother so if you have any younger siblings you know how it is...you feel like they derserve the very best out there...that girl - was definitely not that. hahaha Oh yeah, Michael just needs to BUCK UP hahahaha. Seriously though, this looks AMAZING! I am such a veggie lover, and especially with holiday season (which means cookie season) coming up, I want to eat a LOT healthier to compensate (and I just want to be healthier in general). I'm constantly trying out new, healthy recipes with my family, and this is definitely going to be one I use!
I'm also such a fan of Eat This, Not That, but never knew there was a cookbook! I will definitely have to pick this up - thanks for sharing, Tracy! :)
